Tonight at the bar: one of the greats â Auguste Escoffier.
If you come from hospitality or gastronomy, you surely know his name. He was, in a way, the Steve Jobs of fine dining (1846â1935) and became 89 years old.
Why do I want to highlight him here? Because I often meet people who resist change. Escoffier, however, was a pioneer: rooted in tradition yet open to innovation. During my time at The Culinary Institute of America, I had the privilege of hosting his grandson. Imagine â his grandfather had already witnessed how many women were cooking professionally then, the so-called âgreat mothersâ of French cuisine: Mère Brazier, Mère Bourgeois, and Mère Fillioux, to name just a few.
Escoffier honored tradition, but he also integrated the new. A mindset as relevant today as it was then. Watch the Reel â maybe twice, maybe three times â and let yourself be inspired by what this man perceived so clearly, so many years ago.
